We have tonns of fresh organic eggs, we have wild greens, we have great organic flour… just need ricotta cheese to make delicious ravioli di magro (ricotta, parmesan, greens & egg filled ravioli).

So, off we go and drive to our friend Flavia at Fattoria Abderhalden to get some freshly made ricotta (and, while we’re there, we buy some outstanding caprino (fresh goat cheese) and caciotta (both mixed cow and goat and pure goat).
Flavia and Linda were kind enough to come with us for a little walk around the farm to see the goats and cows who stay out in the pastures as long as the weather allows.

 

 

 

 

 

 

This is a small part of the outcome of the fun afternoon with our friends and a day of pasta making: over 200 delicious tortelloni di magro. (You can learn how to make them during our cooking classes… please check with us!)
